Juicy & tasty SUPERFOOD muffins with blue berries
- gluten, white sugar.
+ nutrients, antioxidants.
For about 12 superfood muffins you need:
1.5 tbsp BLUE - blueberries, black currants, aronia
150 g butter / ghee / coconut oil
2 eggs
1.5 dl birch sugar or coconut sugar
3 dl almond flour
1 dl coconut flour
1 tsp vanilla powder
1.5 dl almond milk or oat milk
0.5- 1 packet of blueberries
1 tsp baking powder
A pinch of sea salt
0.5-1 dl oatmeal to top with
Do this:
- Set the oven to 200 g.
- Mix butter and birch sugar with an electric whisk. Mix in one egg at a time and whisk around.
- Mix in other ingredients except blueberries and oatmeal.
- Pour in blueberries and stir gently with a spoon.
- Scoop the batter into muffin tins and top with some oatmeal and sea salt.
- Put in the oven for about 15-20 min. or until they have a nice color. Leave to cool for a while before eating.
- Ready to enjoy!
Can be frozen perfectly, perfect to be able to pick out and offer this summer!
