An energy-rich but healthy alternative to other Christmas treats!
Raw food balls with optional Nordic Superfood powder, e.g. with RED, (lingonberries, cranberries, red currants)
Ground almond flour (aka Chufa or Tigernuts) is a good option if you want to make the balls nut-free, but you can also use almonds, cashews or hazelnuts. If you use whole nuts, however, you should mix/chop them yourself first.
Ingredients (for 10-12 pcs)
60g ground almond flour (alt. optional nuts such as cashews/hazelnuts)
1.5 tbsp Cocoa nibs
1 tbsp Coconut oil/Ghee
15g melted cocoa butter
15g melted cocoa paste
130g Medjool Dates (approx. 12st)
3 tbsp Cocoa
2 tsp Honey
1 tsp vanilla powder
1/2 krm Sea salt
1 cream dried ginger
Berry powder to roll the balls in
Do this:
Put the dates in hot water for a few minutes. Then peel off the skin and remove the seeds. Melt cocoa butter, cocoa paste and coconut oil over a water bath. Mix the dates with all the dry ingredients to a rough dough in a powerful mixer. Add the fat and mix again until you get a smooth dough. Shape into 10-12 evenly sized balls. Roll the balls in berry powder. Store the balls in the fridge.
